The Cut
The eye of round is a lean cut of beef taken from the round primal, specifically the rear leg of the cow. It is a cylindrical, elongated muscle located in the round subprimal cut, nestled between the top round and bottom round. This cut is known for being lean but it can be tough if not cooked properly due to its low fat content and high amount of connective tissue.
The Preparation:
Before slow cooking, sear the roast on all sides in a hot pan with a bit of oil or liquid. This step locks in juices and adds a rich, caramelized flavor to the meat. The eye of round roast benefits from low and slow cooking methods such as braising, slow roasting, or using a slow cooker. Cook it at a low or medium temperature.
