The Cut

London Broil is a thick cut from a lean muscle. Sometimes labeled as a top round or another large lean cut. 

The Preparation:

London broil is intended to be marinated to improve tenderness - then broiled to your preferred doneness. Traditionally served at 125° for medium rare.

Common Dishes:

Traditionally served as a full cut and then sliced to 1/4 inch to 2 inches thick, pending the recipe

Recommended spices:

Salt & pepper. Best marinated for a couple hours with your preferred marinade.
