The Cut

It is called "rolled" because the meat is rolled and tied into a cylindrical shape, often with a layer of fat or a fat cap on the outside to enhance flavor and moisture during cooking. This preparation is popular in British cuisine and is often served as a centerpiece for special occasions or Sunday roasts.
The Preparation:
Ensure the roast is securely tied with butcher’s twine to maintain its shape during cooking. This will help with even cooking and making slicing easier. Sear in hot pat to add depth of flavor and create a crust. Roast on a low temperature until center is 140°F or 60°C.
