The Cut

Baseball steak, also known as baseball top sirloin, is a cut of beef from the center of the top sirloin cap steak that's named for its rounded, baseball-like shape. It's typically cut at least 1.5 inches thick and puffs up in the center while cooking, becoming even rounder. Baseball steak is lean, tender, flavorful, and inexpensive, and some say it's similar to filet mignon but with more flavor.

The Preparation:

You can cook baseball steak on the grill or in the oven. In the oven, preheat to 400°F and cook for 4–6 minutes per side for medium rare, or until it reaches an internal temperate of 120–125°F.

Common Dishes:

Straight from the grill or the pan. Often prepared with sautéed cipollini onions or foraged mushrooms. 

Recommended spices:

Use a simple blend of salt and pepper, and maybe some garlic powder. With premium cuts like baseball steak, less can be more.
