The Cut

Flanken ribs, also known as cross-cut ribs or Korean short ribs, are this slices of beef that are cut across the rib bones, rather than between them. This cut comes from the short plate primal, which is the section of beef directly below the rib primal. Flanken ribs are well marbled and juicy, and have a higher fat content than other cuts. The fat melts at high temperatures, which can help make the meat tender.

The Preparation:

There are many methods to prepare Flaken Ribs, gilling preferred but can be roasted or baked in the oven as well. 

Recommended spices:

Salt and Pepper. Are great with an asian flavor profile or BBQ spices and sauce.
