The Cut

Beef liver is an extremely nutrient-dense and is very tender and moist with a velvety texture. 

The Preparation:

Best if left to marinate in milk for a couple hours prior to cooking, will remove much of the gamey bitterness. Saute in butter with garlic and onions!

Recommended spices:

Salt & pepper, garlic & butter basted with herbs, rosemary or thyme.
