The Cut

Beef short ribs are a cut of beef that comes from the chuck, rib, brisket, or plate of a cow, and are names for the short pieces of rib bones they contain. They are fatty and rich, with marbled meat that's more flavorful when the ribs are well-marbled. Short ribs are considered a prized cut for slow cooking because the long cooking time breaks down connective tissues and makes the meat fall-apart tender.

The Preparation:

Low and slow is the preferred method. Braised, roasted or slow cooker will result in tender delicious meat. 

Recommended spices:

Salt and Pepper. Are great with an asian flavor profile or BBQ spices and sauce.
