Tomahawk steaks are bone-in ribeye steaks cut from the rib primal of the cow, between the sixth and twelfth rib. They are known for their long bone handle, which resembles a tomahawk axe, and their rich flavor and tender texture. Tomahawk steaks are also known as cowboy steaks and can weigh between 1.5 and 3 pounds and be nearly 2 inches thick.
