The Cut

Tri-tip is a triangular cut of beef that comes from the bottom sirloin of a cow's hindquarter. It's named for its triangular shape and location at the tip of the sirloin. Tri-tip is lean and boneless, but still tender and flavorful. It's also lower in fat than other cuts of beef, though it should still have some fat cap

The Preparation:

Because it's lean, tri-tip benefits from quick cooking methods like grilling, broiling, or pan-searing. If you want to cook it past medium, you can marinate it for 2–3 hours before cooking, or season it with a spice rub.
